SWEET & SOUR DOG - KOJI COOKS

THE PERFECT DOG
METHOD
Fill a medium sized pot with Water, add the Dogs, bring to a boil over high heat, cover and turn off - allow to sit 1 minute. Reheat over low heat.
Butter a Bun on the sides, and gently toast on both sides in a Steel Pan.
Place the Dog in the Bun and top with Sweet & Sour Sauce, Mayo and Mustard.
SWEET & SOUR SAUCE - Recipe makes (1 cup)
2/3c Ketchup
1/3c Rice Vinegar
1/3c Light Brown Sugar
6oz Can of Pineapple juice
2T Soy Sauce
1T Cornstarch mixed with 2T Water.
1c Pineapple Chunks
In a small saucepan combine, Ketchup, Rice Vinegar, Light Brown Sugar, Pineapple Juice & Soy Sauce and bring to a simmer over medium-high heat.
Give the Cornstarch (Slurry) a stir and pour in slowly, whisk, bring to a simmer and allow to cook, stirring until it thickens about 3 minutes.
Here in Maine we get great stuff, seriously the best Fish and Seafood I've had anywhere and considering I have lived in San Fran, New Orleans, the Cape, New York and Hawaii that says a lot!
Kayem Hot Dogs are another super product, if you like Dogs these are the BOMB! Furthermore New England has it going on with New England Hot Dog Buns, slit on the top and not too Bready.
Dogs have long been a favorite, in fact in a Santa Fe Newspaper Article featuring yours truly, when asked what my favorite food was I replied "Hot Dogs of course". I am pictured in the article, Cowboy hat and all eating a Footlonger. Hot Dogs are fantastic topped with many things, these are topped with my Sweet & Sour Sauce - Recipe follows.
